Maria, does ‘Tapas’ actually mean anything?
Of course! Tapa! It means to cover – a cover of bread or cheese over your glass of wine to stop the fruit flies getting in. Today we call it Tapear – going from bar to bar having a tapas in each one with a beer or a glass of wine and always with good friends. In Spain our motto is: Eat when you drink, drink when you eat!


....al Vino

In Northern Spain, chorizo is cooked in cider, but me, I like it with red wine!
Chorizo al Vino
550g Chorizo sausage
350ml Dry red wine
1 bay leaf
Slice the sausage add to a frying pan with the wine and the bay leaf.
Cook over a low heat for 10-15 mins, making sure the wine has reduced slightly.
Serve with chunks of bread to mop up the juices!
